Fabulous Foodz began in Febin’s kitchen. Febin is a chef here in the UK, cooking for the Kerala community: weddings, community events, family parties, and everything in between. Food enthusiasts know his cooking well, and he has fed every age group, from children’s birthdays to grandparents’ anniversaries.
One question followed him everywhere: how do we get this taste at home? He shared recipes, but a recipe alone rarely got people there. The hard parts of naadan cooking are the parts that take a morning: drying, roasting, grinding, getting the blend right. So Febin decided to do those parts himself and pack them, so anyone can finish the dish in their own kitchen.
The method he packs is an old one. Long before refrigeration, Kerala households dried vegetables, chillies and curry leaves in the sun to keep the harvest’s flavour through the year. Each Fabulous Foodz mix pairs that kind of sun-dried base with a spice blend roasted and ground in-house, the way Febin makes it for his own cooking.
What’s left for you is the easy part: soak the base, sauté it, stir in the spice mix, add your chicken or fish, and serve five people in under half an hour. It gets you the taste Kerala calls നല്ല നാടൻ, proper country-style, without the day of work it usually takes. His talent, shared the practical way.
