Garam masala is the finishing blend: fennel, cinnamon, cardamom, star anise, cloves and cumin, slow-roasted and ground in small batches so the natural oils stay in the spice. It goes in near the end of cooking, when the curry is nearly done. A pinch lifts a dish; a spoonful defines it.
